The appealing simplicity of this neutral planter with Thyme growing in it speaks of home decor, garden freshness and food all at the same time. Now, that is a pretty good combination. You already have the fact that The Country Register is a lot about home and very close behind that ranks the garden these days. We all love to eat and the new focus on healthy eating certainly can make use of fresh herbs. The garden can also be a place to embellish with garden decor so readily available at specialty shops these days.

Our readers love to try new things. Sometimes we revive an old recipe and they love those too. I love to bake. But all this talk about healthier eating has made me take a look at how much sugar I enjoy. The other day I found a suggestion to substitute an equal amount of soft dates for the sugar. So, with that in mind I will try it and hope to make my favorite cookie legal. Here is my favorite cookie and you can see that this cookie might do well with dates in it instead of sugar.

Zucchini Cookies

Cream: 1 C soft butter, 2 C. brown sugar, 2 eggs, 1 t. vanilla
Mix in: 2 C. flour
2 Cups oats (Old fashioned)
1/2 t. baking soda
1/2 t.baking powder
1/2 t. salt
2 small zucchini shredded and patted dry a little bit
1 1/2 chopped nuts (I use pecans)
1 C. coconut
1 C. raisins or dried cranberries

Bake at 350 degrees for 12-14 min. Remove and cool on rack. For the perfect uniform cookie use a medium sized cookie scoop.
These cookies freeze well and can even be enjoyed straight out of the freezer.
